    The surface sets in seconds while the juices stay inside. The aroma of binchotan is part of the seasoning itself, creating a finish that gas heat cannot reproduce.

    We adjust the charcoal arrangement and heat with care, grilling each part at its ideal temperature. By using both high and gentle heat, we draw out a fragrant exterior and juicy interior.
